Salsa Bean Cakes...

These are ridiculously easy to make and full of flavor! You get the tangy taste of salsa and the kidney beans give it a meaty texture. I eat them with all the same toppings I’d put on my burger. The new whole-wheat thin hamburger buns go well with this patty.



Salsa Bean Cakes

Can of red kidney beans -rinsed and drained (540mL)
1 large egg, fork-beaten (or egg substitute)
1 cup crushed tortilla chips
½ cup medium salsa
2 tsp cooking oil


Mash beans with fork in medium bowl.

Add next three ingredients. Stir well. Divide into 6 equal portions and shape into 3 ½ inch patties.

Heat cooking oil in large frying pan on medium heat. Add patties. Cook for about 5 minutes per side until browned and heated through.

1 patty: 142 calories; 4g fiber; 6 grams protein
